Watermelon and Feta Salad

I have saved this post for about two weeks now and trust me when I say it’s been tough to control my excitement. Why have I waited to share with you all? To be honest, I’ve been extremely busy — is there a post I don’t complain about my schedule? I apologize, I’m trying to keep the whining to a minimum — with my little sister graduating this past weekend (more on that to come!). Between entertaining family, cleaning, lending a hand in the party preparation, etc., I had my hands full. My lame excuses aside, I knew that timing was important when delivering these gorgeous, mouth-watering photos and instructions. With festive soirées to attend this holiday weekend, a salad like this provides seasonal flavors, gorgeous colors and the nutritional benefits to keep you looking simply SMASHING in that tiny bikini. So move over plain Jane garden salads lacking pizzazz, or worse —
the caesar doused iceberg lettuce. Woman’s Day Watermelon and Feta Salad is just as delightful as it sounds. The bite of peppery arugula paired with the sweetness of ripe watermelon and salty feta makes this recipe the perfect summer dish I will be making often the next few months. 

Ingredients
Dressing:
2 tbsp olive oil
1 tbsp white wine vinegar
Zest and juice of 1 lime
Freshly ground pepper and a pinch of kosher salt

Salad:
1/4 small red onion, thinly sliced
1-lb piece seedless watermelon (I guestimated — I love watermelon!)
1/2 English cucumber, thinly sliced and cut in half
3 cups baby arugula
3 oz feta cheese

To start, whisk together the dressing ingredients.


Slice up the red onion and add to the dressing. Set aside, occasionally mixing while you prepare the rest of the salad (for 10-15 minutes).



While those flavors combine for a light yet flavorful dressing, get your knife and cutting board ready. Thinly slice up half of the cucumber.

In a large bowl, add in the arugula and cucumber. Next, tackle the watermelon. Remove the rind and cut into inch-thick, triangular wedges. 

Snack on the funky-looking/broken pieces (insert obnoxious emoticon here). Yum! Ok, ok don’t fill up, you have a salad to eat. Moving on…add in the feta and drizzle with the dressing/onion mixture.

Gently toss and serve! So pretty…and tasty.

Monday Cuisine

Today started off early. I woke up — thanks to my own mental alarm clock — at 4:15. Yes, a.m. and yes, it was still dark out. After ignoring my sleepy eyes and tight hamstrings (as a result of the Branford 5-mile Road Race I competed in yesterday), I thew on my running shoes for a 3-mile course near my house. It felt great to breathe in the crisp, summer air and work out the kinks in my cramped legs, all the while be guided solely by the glow of a flashlight. I ate a solid breakfast, showered and before I knew it, I was on the train into Grand Central. Rise and grind! Gotta love Mondays…

I met up with my friend, Chelsea, for lunch in Bryant Park. (We commuted in this morning again together. Her last day of her co-op is tomorrow, total bummer. I’m going to miss my train buddy!) The weather was gorgeous — not too hot and not too cold — so I was psyched to catch a few rays during my lunch break! My metabolism has been running wild with the mileage I put in running this weekend so I indulged in a veggie-filled salad and roll of sushi (salmon, avocado and roe wrapped in cucumber) from Zeytinz Fine Food Market Place. It was just as good as it looks, if not better!

At 6, I got out of my internship and met up with my friend, Laura, for dinner in West Village after a few stops on the subway, which I might add I’m starting to get the hang of…somewhat. We decided that Hummus Place looked appetizing after coming to the conclusion we wanted something light, fresh and summery. It was all that and more…plus outdoor seating to enjoy prime people watching. Check out my gorgeous “Health Salad” made of freshly cut tomatoes, cucumbers, parsley and onions. Crunchy and full of flavor!

For an entree, we split the “Hummus Fava” which was topped with fava beans, Tahini, hard boiled egg, olive oil and spices. DIVINE! Instead of eating it with the pita, I spooned it onto my salad.

Laura opted to do the same with her “Tabule Quinoa” dish. She was raving about it, respectfully so! Yum.

Before heading back to her beautiful apartment, where I’m currently enjoying the comfort of her couch, we stopped by Phileo Yogurt for some dessert. I got a heavenly combination of non-fat chocolate, cappuccino and strawberry froyo topped with fresh raspberries. Holy cannoli! It was glorious. I’m not one for sweets or desserts, but every once in a while you deserve to treat yourself. I savored every last bite. All in all, another great day in the city. Now it’s time for me to get some shut eye and be grateful to be able to wake up with barely a commute tomorrow…just a few blocks to walk! It will be great exercise. Father’s Day Tribute

Dad,

I love your big hugs, especially after a long, tough day. (It may sound strange, but I crave them when I’m not at home.) I love that you still peak in my room late at night to wish me sweet dreams, just like you did when I was a little girl. I love how we share similar passions — running, cooking, skiing (to name a few). It was you who fueled my fondness over the years. I am forever grateful for your knowledge, instruction and patience, whatever the lesson or task may be. Words can’t even begin to describe how much you mean to me, Dad. I truly appreciate all that you do, from the warmth of your wisdom to the never ending support you provide as I continue to pursue my dreams. Thank you for everything. Happy Father’s Day!

Tuna Salad Roll-Ups

After a successful leg strength training routine yesterday morning, with a little cardio and abs thrown in here and there, I needed to refuel with an energizing lunch full of greens and protein. For some reason, the first thing that came to mind was tuna. I honestly don’t recall the last time I ate the smelly canned fish but it was all I could think about and I simply didn’t fight it. Instead of creating a fattening, mayonnaise-doused tuna salad sandwich, I decided to make a healthy alternative and ended up wrapping my salad creation in colorful swiss chard. It. Was. Delish.


Ingredients
4 large swiss chard leaves
1/2 of a small red onion, thinly sliced
2 cans of tuna fish (I used Bumble Bee’s Solid White Albacore Very Low Sodium in Water)
1 can of chickpeas
1/2 of a red bell pepper, grilled
1/4 cup chopped parsley
1/4 cup English cucumber, sliced and cut into quarters
Zest and juice of 1 lemon
1 tablespoon apple cider vinegar
3 tablespoons extra virgin olive oil
2 garlic cloves, minced

To start, place half of a red bell pepper on the grill until lightly browned.


While that cooks, combine the mix-ins for the dressing: apple cider vinegar, olive oil, lemon zest/juice and garlic. Whisk together and set aside.


Time to cut and combine the ingredients! Thinly slice the red onions and chop the parsley. Open and drain both cans of tuna, as well as the chickpeas. (Rinse and dry the chickpeas before pouring in.)

Cut cucumber slices into fourths for bite-sized chunks!

Finely chop up half of the cooked bell pepper after removing it from the grill and add to the salad. Julienne the rest into strips to place inside the wraps. Drizzle the ingredients with the dressing and mix it all up! 


Now for the wrap portion. After rinsing and drying the swiss chard, add strips of the roasted red pepper to the middle of the leaves. The bell pepper provides great flavor, not to mention adds to the contrast of colors. I could not stop admiring the beautiful array of brights!

Last, but certainly not least, add a generous helping of salad and roll it all up! Use toothpicks to hold it all in place.


Mmm, there you have it! The perfect, energizing lunch I was looking for. By skipping on the bread and mayo, you reduce carbs and fat content, amping the entire recipe up with the nutritional value offered by the veggies, beans and fish. This is definitely a recipe I will be making often this summer.

An Assortment of Recap Ramblings

Hi! Hi, hi, hi! Have you missed me? Sorry for my absence. I feel like I have some explaining to do! First off, it has been quite a crazy week. Let’s just say I had my fair share of traveling. Between commuting in and out of NYC, running errands/getting pampered Thursday (I know, oh poor, Lauren…) and being in Jersey for a wedding this weekend, I’m pooped. I’m looking forward to hanging in on this rainy evening (see you in a bit, Gossip Girl Season 2) and catching up on sleep.

My internship officially began on Monday and I’m loving it. Time flies because I enjoy what I’m doing and it sounds corny, but I can’t stop smiling! I’m learning a lot, have met some great people already and sincerely look forward to the exciting things the next two months or so have to offer. After getting over the first day jitters, I was able to relax a bit on Tuesday, especially after running into a friend from high school on the train. We decided to meet up in Bryant Park for some grub during our hour lunch break and to take advantage of the wonderful weather, of course. Win.

I am proud that I not only was able to find my way there, but was also able to do so in a timely manner with a half hour to spare! (Note: Bryant Park is only a 9 minute walk from the office I’m working at…I took a few wrong turns along the way.) I attribute much of my success to Google Maps yet, being as directionally challenged as I am, I was slightly surprised to have the time to sit down and enjoy lunch in addition to my travel time. What was lunch, you ask? Spinach salad with edamame, carrots, asparagus, avocado, tomatoes and tofu lightly drizzled with balsamic vinaigrette. Hit the spot!

After being in and out of the city (which is around a 2 1/2 hour commute both ways) and waking up at 4:45 each day to start my morning with a 3 mile run, I needed some “me time” on Thursday in preparation for the wedding I was to attend. A gym sesh of free weights and core work followed by a mani/pedi with a book from the Sookie Stackhouse series (in which True Blood is based on) sounded like a good day off to me! I Need A Vacation on my toes and Ballet Slippers on my fingers. Gotta love dainy pink polishes!

SOoooo…that brings me to yesterday/today: Mike’s cousin’s wedding! I haven’t been to a wedding since I was seven-years-old, so I was very excited. The ceremony was very beautiful, the reception was a blast and the food was delightful. Congratulations Kelly and Aaron! I took a gamble not trying on the dress before purchasing it in the city with Taylor on Wednesday, yet it ended up fitting perfectly. So comfortable, too. I channeled my inner Blake Lively with wavy locks, although my hair refused to cooperate in the humid air. Anyway, there’s my recap for my hectic week. I’m off to make some dinner: a weird combo of this, this and this…don’t judge.One last thing before I go: I’m working on a Father’s Day gift guide post and need your help! What do you think is the perfect present for Dad?

Saturday Summary

Yesterday was pretty fabulous. My alarm went off at 6 a.m. and after a full night of rest, I popped out of bed, had a light breakfast (a protein ball and banana) before heading down to the beach for a morning jog. Come to find out, my iPod Nano was dead, total bummer, so I resorted to using my iPhone for some jams and tried out the Nike+ GPS app in the process. Two thumbs up! The app utilizes GPS to track your distance and pace, notifies you at each mile marker, has a “cheering” option (gotta love me some positive reinforcement) anddddd allows you to select playlists/songs from your iTunes. Downside = I hate having to hold my new cellular device while getting sweaty, especially when my armband for my Nano is so convenient. Regardless, iPhone users, get this app. Forgot to mention: it’s FREE! Anyway, back to recapping my Saturday. After working my tail off all morning at work (a local, healthy breakfast/lunch place in town) I was able to swiftly shift gears after a shower and some sprucing up for my little sister’s senior prom! Kru’s new camera conveniently refused to turn on so she consequently had to borrow mine, leaving me to document every move of the gorgeous gal via my phone.

It is tradition for senior prom-ers to head to the town green for photos so my friend, Katie, and I walked around, playing paparazzi, feeling incredibly old. More of that “nostalgia” from last post, amplified by the fact that we knew next to no one there besides my sister, her closest friends and a few prom goer siblings, like me, who we went to school with *back in the day.* My sister looked stunning, as usual, and the senior class could not have asked for a more beautiful day. How elegant was her TSwift-inspired hair!?

Sweet Summertime

I’ve been pretty nostalgic lately. Maybe it’s the fact that being home and sleeping in the same room I’ve slept in since kindergarten has finally sank in. Or maybe it has been the catching up, immature giggles and cocktails with my two best friends from high school, alongside the run-ins from old classmates wherever I may go. Come to think of it, you know what could very well be the nostalgia culprit? My new obsession with Gossip Girl. I’ve watched half of the first season in a matter of days. I think I have a problem. Regardless, let me summarize my overall weirdness by saying I got teary eyed listening to Trace Adkins’ “You’re Gonna Miss This” while driving through my neighborhood…

Whatever this emotional stint may be/be about, I have decided not to fight it. Instead, I’ve allowed it to inspire me, especially when it came to making one of my favorite summertime meals the other night: Spinach and Strawberry Salad. Although I lost the original recipe my friend, Amy, and I used to make, I decided to improvise a bit using Fitness Magazine’s Mesclun Strawberry Salad as a guide. It ended up tasting great, especially with grilled chicken on top. Avocado mixed in would have been divine, but my local grocery store was all out so I had to manage without my favorite ingredient. Besides that, it was pretty darn perfect. Oh, the taste of sweet summertime!

Ingredients
(Yields 2 servings)
2.5 ounces spinach
8 large strawberries (or more if you love ‘em like me!)
3 tablespoons apple cider vinegar
1 tablespoon extra virgin olive oil
Freshly squeezed juice from 1/2 of a lemon
Freshly chopped basil to taste (less than 1/4 cup?)
2 ounces of crumbled goat cheese
Handful or two of walnuts
One avocado, cubed
3 small chicken breasts

Start by throwing your chicken on the grill. I was so hungry I didn’t marinate it but feel free to do so if you would like. I bet it would compliment the salad well if marinated in a strawberry vinaigrette! Next, hull and slice the strawberries. In a large bowl, add in the spinach, strawberries, goat cheese, avocado (if desired) and walnuts. In a separate bowl combine wet ingredients and chopped basil.

Once the chicken is done, finish assembling the salad. Drizzle with the dressing, mix it all up and serve! Delicious! Light but sweet and filling with the chicken. Add a pinch of salt alongside a little honey or agave nectar to the dressing if need be.

In other news, I have been trying to get my act together these past few days in preparation for the start of life in the real world and the ever-so-dreaded, intense commuting schedule. Task number one: tackle my bomb of a room.

I would have taken a “Before” to compare to this “After” photo, but it was far too embarrassing to share with you all. Good as new, now. It’s funny how much better you feel in a tidy space. Please note my beautiful bottle of lemoncello brought back from Florence, Italy, courtesy of my besties. 

Next project: organizing the closet by type for easy access and outfit arrangement (jackets>tanks>short sleeved shirts>dresses>oxfords>cardigans). Can you tell I have a ‘thing’ for navy blue stripes? Yeesh…

To make my stripe addiction more apparent, I would like to introduce you to today’s glorious Steve Madden purchase. They can be laceless and feel like a sneaker. Perfect for running around NYC in! Hi, I like you. Boy, am I am a sucker for seersucker…

Last but not least on my agenda was to start compiling a summer reading list. I love having free time to read during my time off from school and what better way to keep me occupied on the train!? Thanks to my wonderful Twitter followers, I have a nice list going already…
