What I Ate Wednesday (#nofilter)

Every Wednesday, many of my favorite bloggers participate in Peas and Crayons’ What I Ate Wednesday, where they share their meals from the day before. Like I’ve mentioned before, I love posts like this simply because it helps connect, understand and really get to know the people behind both the apron and computer screen a little bit better. Plus, you can’t beat the recipe inspiration!

So guess what? After weeks of putting “WIAW” on my to do list, I remembered this week. Well sort of…I may have forgotten to take a few pictures but here are the highlights.

Breakfast yesterday was nothing out of the ordinary. Two eggs over hard, sprinkled with nooch and chia seeds (not pictured), followed by a banana with crunchy nut butter. I decided to put a “Love Your Veggies Month” twist on the naner/PB combo by stealing an idea Aubrey, from I Talk To Food, put on Instagram recently: a green wrap. Thanks collard greens!

This semester, it has become a weekly tradition to get “swiped” into my favorite dining hall every Tuesday afternoon by one of my besties, Erica. Frequent trips to arguably the best salad bar on campus is always encouraged and mountainous piles of greens are consumed, which are always topped with an enormous helping of homemade hummus. This week was nothing different…ahem, the above photo was one of two plates.

Onto dinner. Since I leave campus for Manhattan Wednesdays after class, Tuesday night meals have become a schmorgesborg. I had to cook up a package or ground turkey before it’s sell by date so I paired a large serving of it with roasted asparagus and veggie chips (sweet potato and kale). To reward myself for a successful day of studying, I ended my day with a big bowl of air-popped popcorn (with a few sprays of liquid aminos and shake or two of nooch) to accompany me in my Smash catch-up session. Yesterday was clean eating at its finest!

Spicy Lime Protein Lettuce Cups

I started cutting down on my carb and processed food intake right around the summertime. I was sick of how bloated I felt, my constant irregularity (TMI? sorry, but it’s true…) and simply believed that if I weaned off of my faithful cereals, pastas and breads, I would have to incorporate more nutritious foods into my diet. I did and, quite honestly, it was the best decision I have ever made. People think it’s weird that I crave a big bowl of greens topped with an assortment of veggies or have a piece of fruit to satisfy my sweet tooth. Heck, they see my portion sizes and don’t understand where it all goes. Straight to fuel, ladies and gentleman! But at the end of the day, it doesn’t matter what other people think. It’s about taking control of your health and feeling GOOD. I can’t tell you how much of an affect (for the better!) this decision has had on my exercise alone. Add in no more bloat, clearer skin and more energy and you can see that the proof is in the (most likely chia) pudding! I’m not going to lie, it’s a tough transition and takes some getting used to, but after months of clean, healthy eating, I decided last weekend to go full out gluten-free. I’ve done a ton of research, have stocked up on amaranth, quinoa, etc. from my local food stores and am excited for what this decision will bring for my overall well-being AND Sprinkled with Love. 

I mean, this was a food blog at one point wasn’t it? I didn’t use to ramble as much about my life and I sure as hell didn’t waste time explaining myself time after time as to my lack of blogging. Hopefully I can get back to posting recipes now that you understand the madness behind a lot of raw ingredients and clean eats. As I’ve come to realize after all my dietary experimentation, you are whatcha eat! Ok, ok. You get it. Enough of me blabbing away. Let’s look at what I made for dinner last weekend for the boyf. Flavorful, filling and hm, another “f” word…not the one you’re thinking of, FRESH. Oh and finger-food is always fun, right? Fabulous.

Ingredients
(Inspired by Keep Your Diet Real)
1 block of extra-firm tofu, cubed
3 green onions, diced
Juice from 2 limes
1 large red pepper, diced
1 cup shredded carrots
2 cups quinoa (follow cooking directions on package)
1 can black beans, rinsed and dried
1 1/2 cups of fresh, hot salsa
A head of bibb lettuce for wrapping (or any leafy, rollable green!)
1 thinly sliced avocado
Extras to serve with: hot sauce (or cayenne pepper), salt, pepper and extra salsa   

Now, this recipe is by no means difficult. Simply rinse and prepare the quinoa according to the box’s directions. While that is simmering, sauté the tofu cubes in a sprayed pan. Feel free to add some minced garlic in there for a little more flavor. Next, slice and dice the rest of the ingredients before combining with the salsa and beans.

Once the quinoa and tofu are done, let it cool before putting everything together in a large bowl with the lime juice. Refrigerate before serving. I would have LOVED to have wrapped them in kale, swiss chard or collard greens but I didn’t think Mike would like that as much. I’m such a considerate girlfriend!

Spoon the quinoa salad into the lettuce cups, add a slice of avocado and extra salsa. Wrap it up and dig in! The spicy lime quinoa itself is great to top a salad or eat on its own. I really enjoyed the leftovers…full of protein, veggies plus gluten-free!

Instagramed Intern Fuel

Peanut butter, coffee, salad, repeat. Oh and a few restless hours of shut eye thrown in here and there. That’s what I’ve been running (literally!) on lately.

The spring semester of your senior year is supposed to be cinch. I mean it’s called “senioritis” for a reason, right?! Yeah, about that…

Mine has been anything but easy thus far but I can’t complain. The career-boosting, educational pros outweigh the tiresome cons. And then some. The good news is only TWO WEEKS stand between me and spring break. Let the countdown begin. I can’t wait to be cruisin’ through the Caribbean with nothing but a bottle of tanning lotion (spf 15, of course), a tiny bikini and a good book. Add in a refreshing beverage of some sort and you have one grinning, soon-to-be graduating gal! 

To compensate for my lack of Thursday/Friday “college life,” I’ve been eating a lot of good food. Dining out and trying new cuisine truly is my kind of weekend…I can’t feel guilty with providing my body the fuel it needs for training and commuting! My friend Laura and I checked out a new place a town over from us called Mad Gourmet, which I can’t rave enough about. Braised kale and beet greens stew with cannelli beans and grilled chicken? Someone just found the way to this foodie’s heart. I’m already thinking about what I’m going to try next!


My training is one of the few things that has remained consistent and strong ever since I made the 13.1 commitment. I’m so proud of how far I’ve already come and am glad that I have this one “constant” to keep me going. Only seven weeks until the big day!

I had to give you a little taste of the healthy meal I whipped up Saturday night. Powered by proteins, wrapped up in lettuce, this dish is going to blow you away. Save the drooling for when the post goes up hopefully today or tomorrow…it’s midterms week over here! Ew, bleh, gross. I know.

Ha, had to end on this note. I guess it’s time to do laundry when toe socks are all you have left. Injinjis are great, though, I do admit. Just take a little time to get used to.

I could live off popcorn, raspberry lime seltzer and crunchy nut butter…easily.
I’ve highlighted my hair since 7th grade.
I’ve never had a dog. Deprived child? I think so.
I have a girl crush on Blake Lively. I try to channel my inner-Serena on the regular.
I recently started doing yoga and can’t get enough of it. Vinyasa Power is my favorite!
I wear pearl earrings everyday. Boring you say? Nope. Classic.
I hate the color red. Unless it’s lipstick.
I’m a firm believer in “everything happens for a reason.” Oh, and that hummus tastes good on/with anything.
I would be in yoga pants and sneakers everyday if it were socially acceptable.
I have been experimenting with cutting dairy and gluten out of my diet since summer. Post on that to come!
I recently caved and started The Hunger Games series. On the second book! I’m obsessed.

Sap-tastic

Valentine’s Day has never been my favorite holiday. In my opinion it’s a lot of hype, expensive and, no matter what, you end up feeling envious of those rose-holding, diamond-dripping gals around you…or worse, on Facebook. Hostile? Well, when you were once dumped publicly through a “roses are red, violets are blue” poem, I feel it’s respectable to be scarred for life. Can you blame me? Aside from the Hallmark of it all and my hatred for red roses (Mike once learned that the hard way, in my defense I was PMSing…), this year has hit me harder than most in terms of how freakin’ lucky I am. That’s why, I’d like to get a little sappy for a second to thank my devoted (and honest!) food tester, encouraging workout pal, fellow sushi lover and favorite commuting buddy for all his love these past five years. Yes, I know I just rambled about how I despise February 14th but I can’t help myself right now. Together Mike and I have shared important milestones like graduations, proms, first apartments and holidays, supporting one another along the way to follow our dreams. I honestly couldn’t tell you where I’d be right now without this guy. Love ya, Schmoop! 

Gosh, he’s such a trooper with me constantly snapping shots of him mid-chew. To go along with my sentimental (borderline sickening…) blabbering, I figured I’d share with you my ten favorite love songs. Where Have I Been?

I really haven’t had time to experiment with new recipes lately and my “blogging time” has been devoted to reading others, discovering new daily reads (post on that soon!) along the way. Between rebuilding my strength after getting over my weird flu-like illness, work, school, commuting to Manhattan, interning, race training, etc., there has been very little time to be in the kitchen. Forgive me?

          

Meals have been looking a lot like the picture to the left. I know it doesn’t look that appetizing, but it’s quite tasty. Stir-fried veggies and tofu (in a drizzle of olive oil and balsamic vinegar) with a generous dollop of red pepper hummus, a sprinkle of nutritional yeast and a pinch or two of chia seeds. Satisfying and power boosting…just what I needed to get my sluggish self through last week’s workouts. In other news, Mike is done with workie for a bit now that the football season is over. It’s SO nice to have my man back. After interning Thursday, we went out to Market Cafe around the corner from his place. Mike wasn’t too adventurous and got a burger, while I ordered the delicious salmon, which was over a bed of oven roasted potatoes, asparagus and roasted red pepper sauce. Although I swore to give up on most fruit until they come back into season (everything  has been so mealy! bleh…), I’ve been on quite an orange kick lately. Out of pure curiousity, I bought and tried my first tangelo (a cross between an orange and grapefruit) last week, which I adored. Add in a cup of Jo in the lovely (teehee, get it?) February cup from Starbucks and you’ve got yourself the perfect afternoon snack! 

          

Saturday morning I bundled up and hit the frosty pavement with Amanda. How about that Okemo Mountain headband circa 1995? A few flakes fell here and there during our jog but the chilly weather didn’t hold us back from completing our 6-miles in exactly an hour. Slow and steady wins the race! Shortly after, I headed back up to school to go to the UConn women’s basketball game vs. Georgetown with the folks and Mike. Lots of guacamole, dinner and margaritas at Agave Grill, my favorite Mexican restaurant, followed. My new favorite cocktail, the Margarita Fresca (Partida Reposado, Cointreau, fresh squeezed lime juice and orange juice). Strong and refreshing!

How. Good. Does. That. Look. Believe me, the picture doesn’t even BEGIN to do the Pasilla Rubbed Tuna any justice. Ahi tuna rubbed with a Pasilla crust, grilled (I asked for as rare as possible!) and served with roasted corn, black bean and mango salsa. Um, yum. Instead of rice, I asked for the grilled veggies, which were out of this world. Add the drizzle of Chimichurri sauce and a mountain of crispy tortilla strips and you’ve got yourself a winner. Mike and I ended up stopping by to see some friends in the area afterward and did a whole lot of nothing (I even skipped the exercise, gasp!) yesterday except enjoy one another’s company. It was weird literally catching up after a month or so of chaotic work schedules. It’s great to have him back.

Tackle a Healthy Super Bowl

According to the USDA, the Super Bowl is the second highest eating day of the year (behind Thanksgiving, of course). With all the booze, wings, pizza and snacks, I can’t say that I’m that surprised. So is it possible to be a healthy nosher while cheering on Manning (or Brady…boooo!)? Absolutely! Here are 10 quick tips toward a nutritious, diet-friendly game plan.

1. Fuel up with a light meal before your soiree.
2. Use and stick to one small plate for portion control.
3. Protein switcheroo…swap beef for leaner meats, beans and/or soy products.
4. Nix the chips. Get your crunch fix from veggies, Popchips, popcorn, baked pita slices, nuts, etc.
5. Alternate each alcoholic beverage with a tall glass of water.
6. Consider using whole wheat or lettuce wraps instead of buns/rolls.
7. Avoid high calorie juice or soda-based cocktails.
8. Go for the hummus, salsa and guacamole over creamy dressings/dips.
9. Use nutritious substitutes (like Greek yogurt, avocado, natural sugars, etc.) to lighten up your recipe.
10. Load your chili up with fresh vegetables and take a timeout on the cheese.
