Where Have I Been?

I really haven’t had time to experiment with new recipes lately and my “blogging time” has been devoted to reading others, discovering new daily reads (post on that soon!) along the way. Between rebuilding my strength after getting over my weird flu-like illness, work, school, commuting to Manhattan, interning, race training, etc., there has been very little time to be in the kitchen. Forgive me?

          

Meals have been looking a lot like the picture to the left. I know it doesn’t look that appetizing, but it’s quite tasty. Stir-fried veggies and tofu (in a drizzle of olive oil and balsamic vinegar) with a generous dollop of red pepper hummus, a sprinkle of nutritional yeast and a pinch or two of chia seeds. Satisfying and power boosting…just what I needed to get my sluggish self through last week’s workouts. In other news, Mike is done with workie for a bit now that the football season is over. It’s SO nice to have my man back. After interning Thursday, we went out to Market Cafe around the corner from his place. Mike wasn’t too adventurous and got a burger, while I ordered the delicious salmon, which was over a bed of oven roasted potatoes, asparagus and roasted red pepper sauce. Although I swore to give up on most fruit until they come back into season (everything  has been so mealy! bleh…), I’ve been on quite an orange kick lately. Out of pure curiousity, I bought and tried my first tangelo (a cross between an orange and grapefruit) last week, which I adored. Add in a cup of Jo in the lovely (teehee, get it?) February cup from Starbucks and you’ve got yourself the perfect afternoon snack! 

          

Saturday morning I bundled up and hit the frosty pavement with Amanda. How about that Okemo Mountain headband circa 1995? A few flakes fell here and there during our jog but the chilly weather didn’t hold us back from completing our 6-miles in exactly an hour. Slow and steady wins the race! Shortly after, I headed back up to school to go to the UConn women’s basketball game vs. Georgetown with the folks and Mike. Lots of guacamole, dinner and margaritas at Agave Grill, my favorite Mexican restaurant, followed. My new favorite cocktail, the Margarita Fresca (Partida Reposado, Cointreau, fresh squeezed lime juice and orange juice). Strong and refreshing!

How. Good. Does. That. Look. Believe me, the picture doesn’t even BEGIN to do the Pasilla Rubbed Tuna any justice. Ahi tuna rubbed with a Pasilla crust, grilled (I asked for as rare as possible!) and served with roasted corn, black bean and mango salsa. Um, yum. Instead of rice, I asked for the grilled veggies, which were out of this world. Add the drizzle of Chimichurri sauce and a mountain of crispy tortilla strips and you’ve got yourself a winner. Mike and I ended up stopping by to see some friends in the area afterward and did a whole lot of nothing (I even skipped the exercise, gasp!) yesterday except enjoy one another’s company. It was weird literally catching up after a month or so of chaotic work schedules. It’s great to have him back.

Today is a day of twos. It’s my 22 birthday and what better a way to celebrate than taking two final exams before noon? Woohoo! Well, at least I’m officially DONE after that. New York, New York for a month starting Monday! I simply cannot wait. Anyway…nothing too (hehe, journalism major humor?) rowdy planned for the evening, just a quiet dinner and cocktails with my two besties. In honor of my day of birth, I compiled a list of fun facts about yours truly. Hey, I’m a quirky, fun gal full of surprises so why the hell not?

1. I modeled when I was little.
2. I was a band geek (alto saxophone) in high school. I rocked that plume-topped hat and wool ensemble!
3. I was the co-captain of my ice hockey team my senior year.
4. I can flatten my nose.
5. My favorite food is seared ahi tuna, especially when it is sesame encrusted.
6. I’m a firm believer that the book is always better than the movie.
7. I only use black ball point pens. I hate blue more than anything and don’t even get me started with pencils…
8. I’m addicted to Pinterest and may already have every last detail of my wedding already picked out.
9. I love grocery shopping and could spend hours wandering the isles.
10. My favorite movie, How to Lose a Guy in 10 Days, was what inspired me to seek a career in journalism. Well, that and the fact that I have a collection of my favorite magazines dating back to 2000. There are stacks hidden in every crevice of my room at school and home…if that wasn’t a tell tale sign, I don’t know what is! 
 

Peek-a-boo! I’d just like to add, when I asked Mike about a fun fact about me, he said that I’m obsessed with peanut butter. That was all my man of 4 1/2 years could come up with…I guess I’m not as quirky and fun as I’d like to think I am? Thanks babe! I guess another interesting fact is that I drive a huge, red SUV. Remember the episode of Laguna Beach when Kristin Cavallari’s car broke down on the side of the road? I drive that same Isuzu Trooper…but in fire engine red. (Yes, the fact that Kristin drove one made it even cooler back in the day.) I love my car and feel super badass driving it. Well, I’m off to take some tests and celebrate. Happy Friday!

You Are What You Eat

As promised, here’s a little synopsis on my wonderful long weekend: I went to NYC late Saturday night to visit the boyf and check out his new, humble abode. The weather couldn’t have been more perfect, the food we ate was delish (minus the protein bar I ate in desperation Saturday night for dinner but we’ll pretend that didn’t happen…) and we burned quite a few cals with all the walking we did. Boy, did we walk. A LOT. Since Mike only has Monday’s off, I had Sunday somewhat to myself. It started off with a nice workout, included a grand tour of 30 Rock followed by a little shopping and ended with watching the sunset on his terrace. Rough life, huh?  

Monday was just plain romantic. I’m sorry. I’m not the sappy type but walking through the quaint streets of Soho and Chelsea hand-in-hand is pretty damn cute if you ask me.

After a quick cardio workout, Mike and I headed to Cafeteria for brunch, which is where he proudly declared that they had filmed an episode of Sex & The City. Isn’t he the greatest? I love their slogan, “You are what you eat.” So true. Anyway, it was around noon so we went for the “unch” part of brunch, both choosing the California Cobb Salad with grilled chicken. I got mine without the bacon or blue cheese, of course. Between the outdoor seating, big mug of coffee and healthy dish, I was in heaven. Oh, and I guess my company made it all the better…

We then wandered our way over to one of my favorite places in New York, Chelsea Market, before strolling the High Line. On a whim, we decided to pay tribute to the recent passing of 9/11′s 10th anniversary by heading over to see the Freedom Tower’s progress. The crowded streets and high security was enough to put me on edge so we quickly made our way toward the ever so lovely South Street Seaport, where we enjoyed happy hour (yes, Mike is drinking a Miami Vice…he’s a keeper, huh?) and an early dinner at Pacific Grill. We had worked up QUITE the appetite!

I ordered the Black & White Sesame Coated Yellow Pink Ahi Tuna, which was served over mixed greens, peppers, cucumbers, tomatoes and hard boiled egg with asian ginger soy dressing. It was divine. Mike went with his typical cheeseburger. Before I knew it, it was time for me to hop on Metro North. I made my way back home, catching the train with Emily after she got out of work, which was fun, then shortly after getting off the train made the drive back to school. Back to reality! It was such a great weekend and I cannot wait to go back the city. Luckily, with the bf now located there, I can go whenever my heart desires. Yay!
