Trottin’ Like Turkeys

I didn’t really know what to expect this Thanksgiving but after my conductor gobbled at EVERY stop on my train ride back to Connecticut, I had a good feeling. (No, I was not able to nap because of his outlandish noises but I give the guy credit for being all festive I guess.) After years of putting on the hoopla for my grandmother and uncle’s sake, my parents, sister and I didn’t really know what to make of the holiday without them. We originally planned on going north to Vermont, avoiding tradition altogether, when our good friends–or should I just call them family at this point–invited us to join them for dinner. It was pretty perfect and after my dad being sick and all, it was nice to not have the added stress the holiday can present. Plus, since we stayed local, I was able to run in the annual Turkey Trot with my favorite running pal! Doesn’t get much better than that. 

With my half so close (one week from today…ahhhh!) and Mandi training for one, as well, we decided to turn the five mile race into 10. You know those crazy people running to the race? That was us. Surprisingly enough, it was a great idea. It felt good to get such a nice warm-up in before getting our Turkey Trot on and as Mandi put it, pushing through the last five with so many people around kept us moving toward that finish line. I mean, everyone from our towns were there, we didn’t want to embarrass ourselves after all. All of that running lent for a guilt-free Thanksgiving, which was two plates full of turkey, slaw and roasted veggies for me! My simple, seasonal broccoli slaw salad was awesome, if I do say so myself (recipe below). The perfect crunch to pair with the whole turkey and mashed potato bit with a sweet tang from chopped apple chunks and the occasional dried cranberry…I may have singlehandedly ate half of that bowl. 

Ingredients
12-ounce package of broccoli slaw
1 Granny Smith apple, chopped
1 carrot, shredded
1/2 cup dried cranberries
1/2 cup walnuts, chopped
1/2 cup apple cider vinegar
3 tablespoons extra virgin olive oil
1 Stevia packet
Salt and pepper, to taste

Since my family loves leftovers–who doesn’t!–we ended up making our own bird and a few favorite side dishes the following night. It was weird not having Mike around to devour a plate or two of grub with me. The man I’m most thankful for couldn’t celebrate this year because of work (stupid football!) but don’t you worry, I brought him back a huge container of his favorite Thanksgiving things to show him how grateful I am to have him. I mean, come on, no Thanksgiving? That’s just plain wrong and he deserved some turkey. As you can see, the slaw made another appearance. You know a recipe is good when you make it two days in a row. Oh and in my opinion, avocado trumps gravy any day. Yum!

I have so much to be thankful for this year although, as you know, it’s been a bit of a crazy one. It was a bit strange not having Grandma Ginger and Uncle Ricky across from me Thursday night, but as I toasted to all that I am thankful for and clinked my wine glass with my dad, I couldn’t help but focus on the positive. I’m living in arguably the best city on Earth with the guy I fell in love with when I was 17-years-old. I have a dream of a job that I look forward to every single day. I am surrounded by the most incredible, supportive friends and family anyone could ask for. After quite the scare, my dad is well and even starting to run again. I cannot wait to jog alongside him as I compete in my second half marathon. Let the carboloading begin!

Out With The Old

…and in with the new! After a year of dealing with a crime scene-looking laptop (my 4-year-old MacBook’s screen cracked randomly while moving back into my condo), I have an exciting announcement to make:

Hello gorgeous! No longer will using my computer seem like a chore. It was so difficult seeing anything, let alone be productive with the oldie! My Pro is speedy, shiny and my new bff. I’m giddy and wasn’t afraid to show it, as you can see above. Yep, we’re already getting acquainted. I figured I’d truly break her in with a post!

Naked

I have always been a fan of Naked all-natural juice and smoothies. The Green Machine is my jam! That’s why when I was contacted by the fabulous brand to try their new reduced calorie smoothies, I was thrilled. Guilt-free, 100% juice and no added sugars? SCORE! The Reduced Calorie Lychee and Reduced Calorie Citrus Lemongrass are far from watery or tasteless, like other “reduced” drinks. Instead, they provide for satisfying hydration, loaded with nutritional value at just 100 calories per serving! The tropical lychee smoothie made for quite a refreshing post-run fuel with its coconut water base, if I do say so myself. 

I had the Mango Veggie smoothie the other day as an on-the-go meal replacement. Who knew it could be that easy to get your daily dose of veggies? Each 15.2-oz bottle has two full of veggies and one serving of fruit (the ingredients include mango, carrots, sweet potato, sweet corn, apple, chickpeas, butternut squash and a hint of lemon). Can’t beat that! According to Naked Juice’s global nutritional manager Laura Karness, Ph.D., R.D., ”The Mango Veggie blend can help meet the daily requirement for more than 8 nutrients, including fiber, vitamins A, C, E, B6 and B12, niacin and pantothenic acid.”

Savory Cinnamon Fries

I used to hate roasted or cooked carrots…they get all smooshy and soggy, ruining their natural, crunchy appeal. Bleh. After I stumbled upon this recipe last week on The Healthy Apple, though, I decided to put my preconceived notions aside and try them again with an open mind. Boy, am I glad I did so because I have had a change of heart and may have found one of my favorite side dishes. Sweet and savory, but healthy! See you never, soggy veggies!

Ingredients
(slightly altered from the original The Healthy Apple’s Apple n’ Parsnip Crunchy Fries)
2 granny smith apples
4 large parsnips
6 large carrots
1/2 onion
Olive oil
Agave Nectar and cinnamon to taste 

Begin by washing/peeling the parsnips and carrots. 

Slice veggies and apples into thin, fry-like shapes (the more slender, the better for crunch purposes).

Place parsnips, carrots, apples and onion onto a baking sheet. Lightly coat with cooking spray/olive oil and generously sprinkle with cinnamon. Place in the oven at 400°F for 30 minutes or until the fries are golden brown with a crunchy texture.

Drizzle with Agave Nectar to serve. Mmmm…cinammony goodness. WARNING: your kitchen will smell absolutely divine while/post roasting. What food item are hesitant to re-try?

Commuter Lusting

Two weeks from now I will be wrapping up my junior year of college. Oh. Em. Gee. Where has the time gone? It seems like just yesterday, my roommate (now of 3 years), Gianna, and I were moving into our miniscule, old dump of a dorm, struggling with acclimating to life away from home at a big school. I have grown up so much since then, maturing with living off-campus, picking up a double major and writing for the school newspaper, alongside my involvement in other extra curriculars. It’s crazy looking back yet even more daunting is the fact that at this time next year I will be graduating, on the prowl for a job, while immersing myself in the real world. Gulp. Dun, dun, dunnn.

To focus more on the present, I will be living the life of a commuter in about a month and cannot wait (more for the opportunity I have in NYC, rather than the physical commuting…ya win some and ya lose some). Although I am a broke college student, a girl can dream of what would make the commute not as unbearable, right? Who doesn’t want a beautiful Michael Kors Two-Tone Watch to marvel at or the handy iPad 2 to pass the time? Hopefully I can find a job after school gets out to help me afford a new, real world wardrobe full of gorgeous neutral necessities, as seen above. Something about pairing neutrals makes an ensemble all the more sophisticated and grown up. Have a wonderful Easter weekend! What are your recent lustings?

Green with Envy Drink

Good morning! I woke up bright and early on this sunny Saturday to get a nice workout in (P90x Plyometrics) before meeting up for a group project. What was on the menu for pre-Plyo breakfast? A glorious green drink!

Ingredients
1/2 English cucumber
1 Granny Smith apple
Two big handfuls of spinach
1/2 inch ginger root
1/2 lemon
1/4 cup water

I threw all my supplies into the juicer and voilà! Breakfast. Next time I’ll definitely add in some celery…and maybe another apple. Still very refreshing and a great start to my day! What’s your favorite pre-workout fuel?

Spring Training

Spring is in the air and boy, am I glad…I’m so sick of the treadmill and can’t wait to make the shift to outdoor jogs for good! To compliment my cheery state of mind with the change in weather, I decided to put together my favorite workout picks for spring training. As you can see there is a theme. Don’t these colors just shout, “USE ME (and be thrilled to be doing so…)?” I don’t know about you, but I think the hot pink and bright cerulean combo is simply energizing.

PS: I am saving up for a pair of Vibram FiveFingers. I’ve heard such great things, especially for half marathon training, plus they look just plain wacky and fun. What are your thoughts on the innovative footwear?
